_On Salted Fish and Fisheries_ is a fragmentary medical treatise attributed to Euthydemus the Physician. Surviving only as brief excerpts, the text addresses the dietary and medicinal properties of salted fish within the framework of ancient humoral theory. It examines the nutritional value and digestibility of various preserved fish, considering their role within a regulated medical regimen. The work also offers practical advice on preparation and consumption, including warnings about potential spoilage. While obscure and absent from standard histories of ancient medicine, the treatise exemplifies the detailed attention given to dietetics in Greco-Roman medical writing, analyzing a common staple of the Mediterranean diet. 455.(t) ἐν τῷ περὶ ταρίχων ἄμφακες μὲν πρῶτον στόμα καὶ κριται αντα καὶ θιοην γναθμὸν 〈ὃν〉 ηὐδάξαντο δυσείμονες ἰχθυβολῆες, οἷς ὁ ταριχόπλεως ἅδε Βόσπορος, οἵ θ’ ὑπόγαστρα τμήγοντες τετράγωνα ταρίχια τεκταίνονται.
455.(t) ναὶ μὴν οὐκ ἀκλεὲς θνητοῖς γένος ὀξυρρύγχου, ὃν καὶ ὅλον καὶ τμητὸν Ἀλεξανδρεῖς ἐκόμισσαν. θύννων δ’ ὡραίων Βυζάντιον ἔπλετο μήτηρ καὶ σκόμβρων κυβίων τε καὶ εὐχόρτου λικιβάττεω· καὶ Πάριον κολιῶν κυδρὴ τροφὸς ἔσκε πολίχνη· Ἰόνιον δ’ ἀνὰ κῦμα φέρων Γαδειρόθεν ἄξει Βρέττιος ἢ Καμπανὸς ἢ ἐξ ἀγαθοῖο Τάραντος ὀρκύνοιο τρίγωνα, τά τ’ 〈ἐν〉 στάμνοισι τεθέντα ἀμφαλλὰξ δείπνοισιν ἐνὶ πρώτοισιν ὀπηδεῖ.
